Heat 1 cup of groundnut oil in a large frying pan over medium heat. Slice 3 ripe plantains into 1/2-inch thick slices. Once the oil is hot, add the plantains in a single layer. Cook for 2-3 minutes on each side, until golden brown. Remove from the oil and drain on a paper towel. Serve hot with a sprinkle of salt.
