Preheat the oven to 400°F. In a large mixing bowl, toss diced vegetables (such as potatoes, carrots and Brussels sprouts) with 2 tablespoons of groundnut oil and your desired seasonings (such as salt, pepper and herbs). Spread the vegetables onto a baking sheet and roast for 20-25 minutes or until tender.
