Heat a tablespoon of groundnut oil in a wok or large pan over medium-high heat. Add sliced vegetables of your choice (such as bell peppers, onions, and carrots) and stir-fry for 3-4 minutes. Add diced protein (such as chicken, tofu, or Paneer) and continue to stir-fry until fully cooked. Serve over rice or noodles.
