Heat 2 tablespoons of groundnut oil in a large pan over medium-high heat. Add cooked rice, diced vegetables and protein of your choice (such as Paneer, chicken, or shrimp). Stir-fry for 5-7 minutes or until heated through. Add in soy sauce and any other desired seasonings, then serve.
