Heat 1 tablespoon of groundnut oil in a large pot over medium heat. Add 1 diced onion and 2 cloves minced garlic. Cook until the onions are translucent. Add 1 cup of uncooked white rice and 2 cups of chicken broth. Bring to a boil, then reduce the heat to low and simmer for 18-20 minutes or until the rice is tender. Stir in 1 diced tomato and 1/4 cup chopped peanuts before serving.
